my Nobu Inspired miso glazed eggplant recipe

By popular demand, here is my miso eggplant recipe!

I am obsessed with Nobu’s miso dishes so here’s my play on their eggplant appetizer. After some experimenting, I have found this works way better if you cook the eggplant first, then throw into the oven to broil. We like to pair with cauliflower fried rice and top the whole thing with scallions. Sweet savory salty ugh so good. Deets below!

Slice eggplant and make little slits in the center. In a pan over high heat, lay down the eggplant with some sesame oil and cook for 3/4 minutes on each side until brown. Lay down on parchment paper when cooked and prepare the sauce!

Sesame Seeds from Walmart.

Whisking together the ingredients for the glaze. Mirin is from Amazon.

GLAZE INGREDIENTS:
1/4 cup miso (bought at whole
Foods)
1/4 cup rice vinegar (important for tartness!) Couple of splashes Soy sauce (I eyeballed this because that’s how I cook lol)
2 packs of fake sugar
Optional chili flakes for spice


Whisk ingredients together and spoon over the eggplant. Then place in the oven on broil for 4-5 minutes. Sprinkle sesame seeds and serve!
